Jerk Spice Split Pea Soup

RECIPE: Jerk Spice Split Pea Soup

  • Caramelize onions

  • Add dried split peas; stir around a bit, top it up with water, simmer until peas are tender, add water as necessary.

  • Peel/dice, onions, bell peppers, half a pumpkin- sugar pumpkin or winter luxury

  • Toss with olive oil & salt roast at 425* until pumpkin is cooked through

  • When peas are done add roasted veggies, season to taste with olive oil, (can also add splash coconut oil), salt, dash cider vinegar, & Jerk spices.

  • General Jerk Spice is widely varied per household but here’s one to get you started:

    • 1 part each coriander/all spice/ black pepper,  1/4 part juniper, healthy dose of nutmeg, and pinch of clove. For best results shave nutmeg with a microplane and grind fresh remaining spices (pre ground spices from the grocery store make great compost, not food)

  • We enjoy garnishing with fresh herbs, pickled items or crispy pork(sustainably raised, of course) 

As in all our food, using fresh whole ingredients will yield tastiest results.  Buying organic is also about more than just eating organic, it’s about protecting bees, salmon, polar bears, etc. From a chef viewpoint organic has more concentrated flavor, less water. Support local, buy from local farmers at the farmer’s market, it’s tastier that way.
