We’ve been SNAILED!

“Maize & Barley: Unique Taproom with Sustainable Tacos

We are beyond thrilled to present Maize & Barley with a 2025 Snail of Approval award!

Maize & Barley is a truly unique spot: a craft beer taproom in Edmonds serving seasonal tacos rooted in Caribbean flavors. Venus Forteza and Chef Anthony Kjeldsen have curated a small, intentional menu that reflects their deep commitment to working with local farmers, fishers, and producers who care about the land and how food is grown, raised, and caught.

Chef Anthony, a graduate of the Seattle Art Institute’s culinary program, brings more than two decades of experience leading kitchens — and it shows in every detail of the food. Ninety-nine percent of the food is made by hand, including cheeses and handmade corn tortillas. His dedication to preserving peak-season ingredients brings something special to their tacos year-round and supports their low-waste goals.

With more than a decade in the beer industry as a certified beer judge (BJCP) and Cicerone Beer Server, Venus leads a well-crafted beer program that features a rotating selection of local and regional brews. Let her guide you through a beer and taco pairing experience that’s as thoughtful as it is delicious – one that brings out the best in both.

Venus also gives her time and voice to DEIA, LGBTQ+, and women-identified committees, working to grow awareness, increase representation, and expand access to education and resources within the food and beverage industries.

Congratulations to Venus, Anthony, and the team at Maize & Barley on this well-deserved recognition!” - Slow Food Seattle

“The Snail of Approval award is a recognition given to food and beverage establishments in western Washington that are pursuing and practicing Slow Food values in their business. Awardees are food producers who contribute to the quality, authenticity, and sustainability of our local foodways and are regarded as outstanding among peers.

Unlike other food awards, the Snail of Approval is always awarded locally and through the lens of a sustainable food system. The award is based on evaluations focused on six areas:

  • sourcing,

  • environmental impact,

  • cultural connection,

  • community involvement,

  • staff support, and

  • business values.”
